Homemade Whipped Cream Topping

Once upon a time there lived a girl by the name of Irina.  When Irina’s daughter turned one, Irina invited friends over to celebrate and made the most perfect cake in the world.  Between “Oh my god!” and “It’s so GOOD!”  I hardly had any ability to hear what she was saying about the secret ingredient.  When I cooled off and the ability to hear returned to me she told me that the secret to the cake was a simple whipped cream topping that she made herself.   That was six years ago and I still think there is nothing quite like homemade whipped cream topping.  It definitely doesn’t come close to the store bought variety.  It’s essential for a good Napoleon Cake.  (And there’s nothing better than a great Napoleon Cake… except for Lemon Napoleon Cake).  And the best thing about this recipe is that it adapts so well to different flavors and it is super versatile.  Cakes, pies, cupcakes are all his best friends.  And we can’t get enough of it with fresh strawberries.

Ingredients
1 cup heavy whipping cream
3-4 Tbsp confectioner’s sugar

Add the cream and sugar to the food processor and whip it until soft peaks form.

No processor?  No problem.  Feel free to use hand-held mixer or even a simple whisk.

Flavor Factory
You can add half a spoon of vanilla or almond extract.  I love it with lemon zest.
